ASADO HUILENSE


                                         

                                     

Asado huilense is a typical recipe from the department of Huila in which its main ingredient is pork. One of the secrets of the flavor of this dish is that the meat is marinated for 24 hours in a special dressing, which makes it so tasty  and  appetizing. This preparation is the most popular among visitors to the Department's traditional festivals, which are held in its capital, Neiva, each year under the name of Folk Festival where, in addition, the Reign of Bambuco is held.



INGREDIENTS TO MARINATE THE MEAT OF THE HUILENSE ROAST


Pork meat, peppers, Stem onion, garlic, bay, leaf, thyme, paprika, color, sour, orange juice, beer, salt and pepper to taste.













PREPARATION OF THE HUILENSE ROAST


The meat is placed in a meat cooker, marinated. We make the marinade in the blender or a processor placing the previous ingredients, a beer, half a paprika, a head of garlic, onion stem, thyme and bay leaf, salt and pepper to taste, squeeze 6 oranges, blend the ingredients, when already we have it ready we put it to the meat. We refrigerate it for 24 hours to make it taste better, then drain the meat a little and roast it in the oven for about an hour or until it should not be so dry.
